We press the corn in the morning, we turn the trompo all day, and we smash the guacamole when you order it. There is no delivery and there are no tables — you come to the counter and it is still hot.

Masa

It puffs, or it isn't done.

Whole corn, cooked in lime overnight, ground in the morning and pressed to order. A tortilla that has been made properly inflates on the comal within about twenty seconds — the steam inside it separates the two faces. That is the whole test, and it is the reason we do not buy them in.

Hecho al momento

Smashed in front of you.

Basalt, not a blender. The tejolote crushes rather than cuts, so the avocado keeps its texture and the serrano gives up its oil instead of its bitterness. It is made when you order it, which is also why we cannot make it faster.

Three jars, filled every morning.

Jamaica, tamarindo and horchata, plus whichever fruit was good this week. They are made here, they are not from a bag, and when a jar is empty that flavour is gone until tomorrow.

Two sizes. Poured over ice, never pre-mixed.
